Whole Roasted Snapper & Branzino Fish On Infrared Rotisserie

  • A Whole Clean Fish (3 – 5 pounds)

  • Blended Oil, as needed

  • Kosher Salt

  • Black Pepper

  • 4 springs of fresh rosemary

  • 2 Limes


First, clean and wash the whole fish. Then, stuff fish with sliced lime, and 3 whole rosemary sprigs. Next, season inside and out with salt, pepper, and oil. Finally, place fish on the spit and over the grill and allow to roast while rotating. Whilst, cooking for 20-30 minutes until the skin is crispy and the internal temperature reaches 140 degrees. Lastly, remove from the spit and place on the plate with rosemary and limes. Optional: top with salsa or pesto sauce.
