- 1½ lbs. deboned , de skinned chicken thighs, cut into 2-inch chunks.

- Olive oil
- Seven 12-inch bamboo skewers (soaked in water for 30 mins prior to use).
Spice Mix & Glaze
- 6 tsp. honey
- 2 tsp. cider vinegar
- 2 tsp. garlic salt
- 2 tsp chili powder
- 1 tsp. cumin
- 1 tsp. pepper
- 1 tsp. paprika
- ½ tsp. salt
- ¼ tsp. crushed red pepper
INSTRUCTIONS
Firstly, fill a small saucepan with the potato pieces and add enough water to cover the tops. Bring to a boil over medium heat and cook for 5 minutes, with the lid partially covering the top. Stop when potatoes are nearly cooked, but still firm. Remove from the heat and allow to cool slightly.
