Smoked Clam Bake


Hosting a clam bake can be an exciting and memorable event. Here's a step-by-step guide to help you host the perfect clam bake:

1. Plan the Menu:



  • Aside from clams, consider including lobster, shrimp, mussels, corn on the cob, potatoes, sausage, and other seafood or vegetables.

  • Create a checklist of ingredients and quantities needed based on the number of guests.


2. Choose the Location:



  • A beach, backyard, or any outdoor space with a large grill or pit works well for a clam bake.

  • Ensure you have the necessary permits if you plan to host it on a public beach or park.


3. Gather Supplies:



  • Large pot or grill for steaming.

  • Plenty of seaweed or damp burlap to cover the food.

  • Firewood or charcoal for the fire pit/grill.

  • Large bowls, buckets, and utensils for cooking and serving.


4. Preparation:



  • Soak clams and mussels in cold saltwater for a few hours to remove sand and debris.

  • Clean and prep vegetables.

  • Arrange seafood and ingredients in separate containers for easy access.


5. Build the Fire:



  • Start the fire in your pit or grill, ensuring it's hot enough to create a good bed of coals for cooking.


6. Layering the Bake:



  • Start with a layer of seaweed or damp burlap on the bottom of the pot/grill.

  • Layer the ingredients: start with the heartier items like potatoes and sausage at the bottom, followed by corn, then seafood on top.

  • Cover the entire pile with more seaweed or burlap.


7. Cooking:



  • Cover the entire setup with a wet tarp or another layer of damp burlap to trap steam.

  • Let it cook for about 45 minutes to an hour, depending on the quantity and the heat of the fire.


8. Check Doneness:



  • The clams should open, indicating they're cooked. Discard any unopened ones.

  • Other seafood should be firm but not rubbery, and vegetables should be tender.


9. Serving:



  • Carefully remove the layers, starting from the top down, and transfer the food to large serving platters or trays.

  • Serve with melted butter, lemon wedges, and perhaps some dipping sauces or seasonings.


10. Create the Atmosphere:



  • Set up seating, tables, and decorations according to the chosen location.

  • Provide plenty of napkins, utensils, and tools for cracking lobster shells.

  • 2# / PEI Mussels

  • 6 Each / Oysters

  • 6 Each / Clams

  • 12 Each / 16-20 Shrimp

  • 1 Each / Lobster Tail

  • As Needed / Pesto or Chimichurri Sauce

  • As Needed / Pineapple Salsa

  • As Needed / Sea Salt

  • As Needed / Oil

  • As Needed / Micro Greens




  • Assorted Seafood (Mussels,

  • Oysters, Lobster Tail,

  • Shrimp, Clams)

  • Sea Salt

  • Canola Oil

  • Wood Chips/Pellets

  • Pesto or Chimichurri Sauce

  • Pineapple Salsa

  • Micro Greens



Directions



  1. Clean seafood with cold water,

  2. Season shrimp and lobster with salt and oil,

  3. Place on grill with indirect heat and smoke from wood chips.

  4. Cook Clams, Mussels, and Oysters until they open up.

  5. Once the seafood is cooked, toss gently with chosen sauce, (Except Oysters).

  6. Topped with Pineapple Salsa.

  7. Garnish with sea salt and microgreens
