The Ingredients



  • 2 racks of pork ribs

  • 2 tablespoons brown sugar

  • 1 tablespoon smoked paprika

  • 1 tablespoon chili powder

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 teaspoon cayenne pepper (adjust to your heat preference)

  • Salt and freshly ground black pepper to taste

The Chipotle BBQ Sauce:



  • 1 cup ketchup

  • 1/2 cup brown sugar

  • 1/4 cup apple cider vinegar

  • 2-3 chipotle peppers in adobo sauce, minced (adjust for heat)

  • 2 cloves garlic, minced

  • 1 tablespoon Dijon mustard

  • 1 tablespoon Worcestershire sauce

  • Salt and freshly ground black pepper to taste

  • Wood chips for smoking (hickory or mesquite work well)

The Instructions:



  • In a small bowl, combine the brown sugar, smoked paprika, chili powder, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix thoroughly to create a dry rub.

  • Pat the racks of pork ribs dry with paper towels.

  • Generously rub the dry rub mixture onto both sides of the ribs, ensuring even coverage.

  • Wrap the seasoned ribs in plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld.

  • Preheat your smoker to a temperature of around 225°F, using your choice of wood chips for that authentic smoky flavor.

  • Place the seasoned ribs on the smoker grates, bone side down.

  • Smoke the ribs for approximately 4-6 hours, or until they achieve a beautiful smoky bark and the meat is tender and has pulled away from the bones.

  • While the ribs are smoking, combine all the chipotle BBQ sauce ingredients in a saucepan over medium heat for 10-15 minutes, stirring occasionally.
