Grilled Cranberry Balsamic Glazed Pork Tenderloin

Ingredients:

  • 2 pork tenderloins

  • 1 cup cranberry juice

  • 1/2 cup balsamic vinegar

  • 1/4 cup honey

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • Salt and pepper, to taste

  • Fresh cranberries (for garnish, optional)

  • Fresh thyme sprigs (for garnish, optional)

Instructions:

  1. In a saucepan, combine cranberry juice, balsamic vinegar, honey, minced garlic, dried thyme, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until it thickens into a glaze. Set aside to cool.

  2. Preheat your grill to medium-high heat.

  3. Season the pork tenderloins with salt and pepper. Place them on the grill and cook for about 8-10 minutes per side, or until the internal temperature reaches 145°F (63°C).

  4. During the last few minutes of grilling, brush the pork tenderloins generously with the cranberry balsamic glaze, allowing it to caramelize.

  5. Once cooked, remove the tenderloins from the grill and let them rest for a few minutes before slicing.

  6. Garnish with fresh cranberries and thyme sprigs if desired. Serve the grilled pork tenderloin slices drizzled with extra glaze. Enjoy your merry Christmas feast!

Cranberries & Christmas

Cranberries often make appearances during Christmas due to their festive color and tart flavor, making them a popular ingredient in sauces, desserts, and drinks. They can add a delightful tanginess to dishes like roasted meats or even as part of a glaze for grilled items. Grilling during the holiday season might seem unconventional, but it can bring a unique twist to the usual Christmas menu, especially when you incorporate flavors like cranberry into grilled dishes. Imagine a cranberry-glazed grilled turkey or cranberry-infused marinades for grilled vegetables or meats—a fusion of summer grilling with the cozy vibes of the holidays!

Grilling & Christmas

Grilling your Christmas dinner can be a fantastic way to infuse a festive meal with the smoky, charred flavors that come from the grill. Here are some other ideas to make it happen:

  1. Grilled Turkey: Instead of roasting, grill your turkey! It's essential to use indirect heat and keep the grill covered to ensure even cooking. Consider using a flavorful rub or marinade to enhance the taste.

  2. Cranberry-Glazed Ham: Glaze a ham with a delicious cranberry sauce while it grills. The combination of smoky ham and sweet-tart cranberries can be a delightful surprise.

  3. Grilled Vegetables: Prepare a medley of seasonal vegetables like carrots, Brussels sprouts, or sweet potatoes on the grill. They'll get a lovely char and smokiness that adds depth to their flavors.

  4. Grilled Stuffing or Dressing: Yes, you can grill stuffing! Wrap it in foil or use a grill-safe pan to get that smoky essence while it cooks.

  5. Grilled Desserts: Finish off the meal with grilled desserts, like grilled fruit skewers served with a cranberry glaze or a grilled pineapple dessert with a touch of cinnamon.

Remember to manage the grill temperature carefully and keep an eye on cooking times to ensure everything is cooked to perfection. It's also a good idea to have some backup dishes in case grilling takes longer than expected. Enjoy the unique flavors and the outdoor cooking experience during this festive time!
